Abstract
The purpose of this study is to evaluate the effect of the visible light treatment using LED(Light Emitting Diode), as a source of light, on postharvest tomato qualities and antioxidant contents. The tomatoes were harvested at beaker stage and stored 15±0.2(℃), 90±3(%RH, relative humidity) for 21days with irradiation treatment. pH of tomatoes was increased as the storage time increased. But there was not a significant difference from 6 to 15 days. Because there was not a clear difference among all the groups, it is suggested that LED treatment has a little effect on pH of tomatoes during storage. As the sample with blue light treatment showed the highest in values of L and b and the lowest in values of a(p<0.05), the blue light seems to have negative influence on color change of tomatoes during postharvest storage. Hardness of samples was decreased as the storage time increased and there was a sharp decline of hardness till 6 days compared to the next period. As the treated-groups' hardness maintained higher than that of the control from 9 days, LED treatment more than 9 days has a delaying effect on decreased hardness of tomatoes during storage. The lycopene content of tomatoes was increased as the storage time increased(p<0.05). The red and green light treatments more than 3 days and white light treatment more than 6 days are resulted to have increasing effect on lycopene content. And the red and green light have more increasing effect on lycopene content than white light. The blue light is concluded to have not effect on lycopene content of postharvest tomatoes. The content of vitamin C was increased as the storage time increased. The blue, red and white light treatments more than 6 days are resulted to have increasing effect on vitamin C of postharvest tomatoes during storage. The green light couldn't be evaluated to have a positive effect on vitamin C content of tomatoes. The content of total polyphenol was increased as the storage time increased. The green, red and white light treatments more than 3 days are showed to increase total polyphenol contents of postharvest tomatoes(p<0.05) compared to control. And the red and green light have more increasing effect on total polyphenol contents than white light. The blue light couldn't be concluded to have an increasing effect on total polyphenol contents of postharvest tomatoes. The percentage of conservation of weight was decreased as the storage time increased. There was not significant difference among the all groups in all period. The percentage of conservation of weight of the all groups was maintained above 96.70% during the tomato storage. As the result of the experiments, although the each treatment was different in effect on antioxidant contents, the findings suggest that the visible light treatment using LED could improve the antioxidant contents, lycopene, vitamin C and total polyphenol. The red and white light treatments have increasing effect on lycopene, vitamin C and total polyphenol and the effect size of red light is higher than white light. The green light treatment has increasing effect on lycopene and total polyphenol. The blue light has increasing effect on vitamin C. The results of pH, color, hardness and percentage of conservation of weight show that LED treatment didn't induce the significant changes of postharvest tomato qualities. But the blue light has the negative effect on color formation during tomato storage exceptively.;이 연구는 최근 차세대 광원으로 주목받고 있는 LED(Light Emitting Diode)를 광원으로 하여 토마토의 저장 중 백색, 적색, 청색, 녹색 광처리가 토마토의 품질 및 항산화 성분에 어떠한 영향을 미치는지를 알아보고자 진행되었다. Breaker 단계에 수확한 토마토(경기도 성남시 수정구 금토동)는 15±0.2(℃), 90±3(%RH, relative humidity)에 21일간 저장하였다. 저장기간 중에 네 종의 다른 LED를 조사하여 LED가 토마토의 품질과 항산화 성분에 미치는 영향을 조사한 결과는 다음과 같았다. 토마토 시료의 pH는 모든 군에서 저장기간이 경과함에 따라 증가하였는데 6일부터 15일까지는 pH 수치에 유의적인 변화가 나타나지 않았다. 또한 실험군 간 일관된 유의한 차이를 보이지 않아 LED 처리는 토마토의 pH 수치에는 큰 영향을 미치지 않는 것으로 판단된다. 색도는 청색 처리군이 다른 실험군과 비교하여 높은 L값(lightness)과 b값((+)yellowness/(-)blueness), 낮은 a값((+)redness/(-)greenness)을 보여(p<0.05) 청색 LED 처리가 저장기간에 따른 토마토의 일반적인 색 변화를 저해하는 것으로 판단된다. 경도는 모든 실험군에서 저장기간이 경과함에 따라 감소하였다. LED 처리군은 9일부터 무처리군과 비교하여 유의적으로 높은 경도를 나타내어(p<0.05) 9일 이상의 LED 처리는 토마토 과육의 연화를 늦추는 효과가 있을 것으로 보인다. 라이코펜 함량은 모든 실험군에서 저장기간이 경과함에 따라 증가하였다(p<0.05). 3일 이상의 적색 및 녹색 LED 처리와 6일 이상의 백색 LED 처리가 토마토의 저장 중 라이코펜 함량을 증가시키는 효과가 있는 것으로 나타났으며 적색과 녹색 LED 처리가 백색 LED 처리와 비교하여 저장 중 라이코펜 함량을 증가시키는 효과가 큰 결과를 보였다. 청색 LED 처리는 라이코펜 증가효과가 없는 것으로 판단된다. 비타민 C 함량은 모든 실험군에서 저장기간이 경과함에 따라서 증가하였다. LED 처리군은 색에 따라 비타민 C 함량이 유의적으로 증가하기 시작한 시기가 다른 모습을 보였다. 청색, 적색, 백색 처리군은 무처리군과 비교하여 더 일찍 비타민 C 함량이 증가하는 것으로 나타났으며 6일 이상의 백색, 적색, 청색 LED 처리가 저장 중 토마토의 비타민 C 함량을 증가시키는 효과가 있는 것으로 나타났다. 녹색 LED 처리의 비타민 C 함량 증가 효과는 확인되지 못하였다. 실험군의 총 폴리페놀 함량은 저장기간이 경과함에 따라 증가하였다. 3일 이상의 녹색, 적색, 백색 LED 처리가 토마토의 총 폴리페놀 함량을 증가시키는 효과가 있는 것으로 나타났으며 폴리페놀 증가 효과는 녹색, 적색, 백색 순으로 큰 효과가 있는 결과를 보였으나 녹색과 적색 사이의 효과 크기 차이는 유의하지 않았다. 청색 처리군은 총 폴리페놀 함량 증가 효과가 없는 것으로 나타났다. 토마토의 중량보존률은 모든 실험군에서 저장기간이 경과함에 따라 감소하는 경향을 보였으며 전 기간동안 모든 군간에 유의한 차이는 나타나지 않았다. 이상과 같이 본 연구에서는 토마토의 수확 후 LED 광처리가 토마토의 항산화 성분인 라이코펜, 비타민 C, 총 폴리페놀 함량을 향상시키는 효과가 있는 것으로 나타났으며 이러한 효과는 LED의 색에 따라 차이가 있었다. 적색 및 백색 LED 처리는 라이코펜, 비타민 C, 총 폴리페놀 세 성분을 모두 증가시키는 효과가 있으며 항산화 성분 증가 효과는 적색이 백색과 비교하여 큰 것으로 나타났다. 녹색 LED 처리는 적색 LED 처리와 유의한 차이를 보이지 않으며 라이코펜과 총 폴리페놀을 증가시켰으나 비타민 C 증가 효과는 나타나지 않았다. 청색 LED 처리는 비타민 C를 증가시키는 효과가 확인되었으나 라이코펜과 총 폴리페놀 함량 증가 효과는 없는 것으로 나타났다. 모든 처리군의 pH, 색도, 경도 및 중량보존율 결과를 통해 광처리에 의한 토마토의 일반적인 품질 특성은 크게 영향을 받지 않는 것으로 생각된다. 그러나 청색 LED 처리군은 예외적으로 색도 결과에서 다른 실험군과 매우 다른 경향을 보였으므로 앞으로 저장 중 토마토에 LED 조사를 통한 항산화 성분 향상을 위해서는 보다 세부적인 연구가 필요하다.
