Abstract
본 연구는 서울 시내의 대중음식점에서 판매되는 식사를 대상으로 유해 중금속( Cd,Pb,Cu,Zn )의 오염 정도를 분석하고, 이를 기초로 한국인이 식사로부터 섭취하게 되는 중금속의 1日 총섭취량을 계산하여 외국의 섭취 정도와 비교평가해 보기 위하여 실시되었다. 시료는 설롱탕 (또는 갈비탕) , 육개장, 된장찌게백반, 비빔밥, 비빔냉면이며, 이들은 다시 고형물과 국물로 분리하여 중량·용량을 측정하고 습식분해시킨 뒤 유기용매로 추출하여 atomic absorption spectrop-hotometer 로 정량하였다 그 결과를 요약하면 다음과 같다. 1)전지역 및 행정구역별 식사중 고형물과 국물의 평균 농도는 Cd이 0.034ppm · 0.017ppm , Pb이 0.179ppm · 0.073ppm, Cu는 0.491 ppm·0.308 ppm, Zn은 4.624 ppm · 1.403 ppm이었다. 2 )식사 종류별 평균 함량은 된장국물이 설롱탕국물보다 Cu와 Zn함량이 높았으나 다른 금속들은 고형물이나 국물에서 유의적인 차이를 보이지 않았다. 3 )한강을 경계로 한 강북-강남 지역별 식사중 중금속 함량은 고형물중의 Cu는 강남이 강북지역보다 높았으나 나머지 금속들은 고형물이나 국물에서 유의적인 차이를 보이지 않았다. 4 )대중식사로부터 섭취하게 되는 네가지 중금속의 함량을 보면 Cd 28 ㎍, Pb 145 ㎍ , Cu 416 ㎍, Zn 3654 ㎍이었으며 Cd는 설롱탕에서, Zn은 된장찌게백반에서 그 함량이 가장 높았으나 Pb와 Cu의 함량은 식사별로 유의적인 차이를 보이지 않았다. 5 ) 대중식사로 섭취하는 경우 중금속의 1인당 1일 총섭취량을 보면, Cd와 Pb는 FAO/WHO의 허용량보다 약간 높았으며 Cu와 Zn은 중금속으로서 유해한 수준은 아니었다.;This study was conducted to investigate the contamination level of heavy metals for common restaurant meals in Seoul area and further to estimate the total dietary in take of heavy metals The samples included 'seolong- tang (beef and rice soup) or ' galbi-tang' (beef-rib soup), yeukkye-jang' (spicy beef soup), 'doenjang-chigye-bab' (boiled rice with soy paste stew), 'bibim-bab' (boiled rice with assorted mixtures), and 'bibim-naengmyon' (buckwheat vermicelli with assorted mixtures), which were separated into drained residues and fluids. Their weights and volumes were measured and their heavy metal contents were determined by means of atomic absorption spectrophotometry, after acid digestion and solvent extraction with DDTC-MIBK. The results are summarized as follows: 1) The average concentrations of heavy metals in drained residues and fluids were 0.034 ppm, 0.017 ppm in Cd, 0.179 ppm, 0.073 ppm in Pb, 0.491 ppm, 0.308 ppm in Cu and 4.624 ppm, 1.403 ppm in Zn, respectively. 2) The average concentration by meal type was higher in 'doenjang-chigye-bab' than in 'seolong-tang' for fluid in Cu and Zn and it was not significantly different between drained residue and fluid in other meals. 3) The average concentration by region was higher in the northern region than in the southern region for drained residue in Cu, and it was not significantly different between the two regions for drained residue and fluid in other metals. 4) The total amount of heavy metals per meal in the restaurant meals was 28㎍ Cd, 145㎍ Pb, 416㎍ Cu and 3654㎍ Zn. Cd showed the highest value in 'seolong-tang' and Zn showed the highest in 'doenjang-chigye-bab', whereas Pb and Cu were not significantly different among different meals. 5) The estimation of total dietary intake per day was shown to be 84㎍ Cd, 434㎍ Pb, 1247㎍ Cu and 10961㎍ Z n. The intake levels of Cd and Pb were higher than the daily intake limit established by FAO/WHO and the levels of Cu and Zn were not hazardous.
