Abstract
본 연구에서는 사용된 척도와 평가시 허용된 절차에 따라 평가원의 차이 식별 능력에 차이가 나는지를 비교하기 위하여 모델 시스템과 음료를 사용하여 각각 조사해 보았다. 모델 시스템 평가에서는 여섯 가지 농도 (0, 30, 60, 160, 300, 및 600 mM)의 NaCl 용액으로 구성된 총 6개의 평가 시료들을 평가원에게 제시하여 4가지 평가 절차 (Traditional method I, Traditional method II, Traditional method III, 그리고 순위 평점법)을 사용하여 평가하도록 하였다. Traditional method I (구두 응답)에서는 평가원에게 무작위로 배치한 시료를 제시하고 그 자극에 대한 점수를 구두로 대답하게 하였다. 시료는 반복해서 맛볼 수 없게 하였고, 점수도 정정할 수 없도록 하였다. 단, 선 척도의 경우에 한하여 Traditional method I은 수행하지 않았다. Traditional method II (서면 응답 I)에서는 무작위로 배치한 시료 한 개와 해당된 평가지를 함께 제시하여 자극에 대한 점수를 평가지에 표시하도록 하였고, 평가가 끝나면 시료와 평가지를 수거하였다. 시료는 반복해서 맛볼 수 없게 하였고, 점수도 고칠 수 없었다. Traditional method III (서면 응답 II)에서는 무작위로 배치한 모든 시료와 평가지를 제시하고 제시된 시료의 순서대로 평가하게 하였다. 필요에 따라 이전에 평가했던 시료의 점수를 고치는 것은 허용하였으나, 시료는 반복해서 맛볼 수 없도록 하였다. 순위 평점법에서는 무작위로 배치한 모든 시료와 평가지를 함께 제시한 후, 제시된 순서대로 시료의 맛을 보게 하고, 맛을 본 후에는 시료가 담긴 용기를 척도 옆에 차례로 놓아 두도록 하였다. 계속적으로 시료를 맛보면서 필요에 따라 이전에 평가했던 시료의 점수를 고칠 수 있게 하였고, 언제든지 점수를 수정하는 것을 허용하였으며, 또한 평가원의 요구에 따라 필요한 시료를 더 제공하였다. 음료를 사용한 평가에서는 설탕 수준을 달리 첨가한 여섯 가지 농도 (120, 250, 400, 500, 650, 및 800 mM)의 오렌지 향의 음료로 구성된 총 6개의 평가 시료들을 평가원에게 제시하여 모델 시스템과 동일한 평가 절차를 사용하여 평가하도록 하였다. 모델 시스템에서 척도의 종류를 달리 사용한 각각의 24명의 평가원들은 순위 평점법을 사용해서 평가했을 때, 식별 오류의 수가 감소되는 것을 확인 할 수 있었다. 완전 식별에 필요한 평가원의 수를 분석한 결과, 항목 척도와 선 척도에서 모두 순위 평점법을 이용한 경우 더 적은 수의 평가원으로 시료간의 차이를 식별할 수 있었다. 음료의 경우에는 순위 평점법을 사용해서 평가했을 때, 항목 척도와 선 척도에서 모두 식별 오류의 수가 감소되는 것을 확인 할 수 있었지만 완전히 제거되지 못했다. 또한 완전 식별에 필요한 평가원의 수를 분석한 결과, 순위 평점법을 이용한 경우 더 적은 수의 평가원으로 시료간의 차이를 식별할 수 있음을 보여 주었다. 사용된 척도와 4가지 평가 절차를 통하여 관능검사원의 수행 능력을 비교해 본 결과 척도법 사용시 순위 평점법이 기억력의 상실로 인해 나타나는 식별 오류를 감소시킴으로써 시료의 차이를 가능한 정확히 구별해 주었다. 또한 다른 절차 방법에 비해 순위 평점법은 관능검사에 경험이 없는 평가원들의 수행 능력을 향상시킬 수 있었기 때문에, 평가원을 훈련하는데 소요되는 많은 시간, 노력 그리고 비용을 절감시켜 줄 수 있는 평가 절차라고 생각한다. ; Generally, there were two reasons for failing to discriminate stimuli using scaling. One reason might be a failure to control methodological faults like changes in intensity caused by adaptation effect. Another reason might be memory loss. Forcing judges to retaste forgotten stimuli, as with ranking, and to see and alter score attributed proior stimuli, would be expected to differ in discrimination ability. Therefore, the goal of this experiment was to compare 4 procedures (Traditional method I, Traditional method II, Traditional method III, and Rank-Rating) using the 15-point category scale and line scale in more discriminating ability. In the Traditional method I procedure, judges rated each stimulus in random order, verbalizing responses without score sheet. Judges could not retaste and correct prior scores. However Traditional method I in line scale was not performed. In the Traditional method II procedure, judges rated each stimulus in random order on a corresponding score sheet. After testing, each stimulus and corresponding score sheet were removed. Judges could not retaste and could not alter prior scores. In the Traditional method III procedure, judges rated each stimulus in random order, writing all the responses on a single response sheet. Judges could see and alter prior scores if required but could not retaste priorily scored stimuli. In the Rank-Rating, judges attributed scores by placing stimuli aside scale. Judges could retaste, see and alter prior scores if required. Also, sample containers were refilled as required. The order of the 4 procedures was randomized and counterbalanced over judges. In the first experiment, 24 judges rated 6 stimuli ranging over six NaCl concentrations using 15-point category scale and another 24 judges, using line scale. With the Traditional method II, Traditional method III, and Rank-Rating, mean scores for each stimulus were significantly different, indicating perfect discrimination while not with the Traditional method I. Also, Rank-Rating was able to discriminate with a smaller sample of judges. There were significantly fewer discrimination errors in the rank-rating in category scaling as well as line scaling. In the second experiment, involving orange-flavored drink prepared in six sucrose concentrations, 24 judges rated the stimuli using 15-point category scale and another 24 judges using line scale. With the Rank-Rating, mean scores were separated while not with all the traditional procedures. Rank-Rating was able to discriminate all the stimuli with a smaller sample of judges. Also, there were significantly fewer discrimination errors in both scaling methods. Rank-Rating procedure was significantly more discriminating, hence, more powerful. Allowing change of score in Traditional procedures resulted in fewer errors and required fewer judges for the perfect discrimination.
