Abstract
본 연구는 일본음식이 유입이 된 근대기 서울에 어떤 특징과 성격을 가진 일본음식점들이 출현했는지, 그 중에서도 일본요리옥을 중심으로 그 모습을 밝히는 것을 목적으로 했다. 이에 앞서 먼저 일본 근대기의 일본요리옥의 특징부터 알아봤다. 근대기의 일본요리옥은 요리와 술과 유흥을 함께 제공하는 전통일본문화 공간이며, 요리에는 육류를 안 쓰고 생선과 채소를 이용한 요리들로 구성되었다. 이런 특징을 가진 일본요리옥이 일본인의 조선진출과 함께 한국에 유입되었다. 일제시대 서울에서는 일본요리옥 뿐만 아니라 다양한 일본음식점들이 존재했다. 일본요리옥만의 정확한 모습을 들어내기 위해 먼저 그 종류를 독자적으로 12개로 분류했다. 그 분류는 일본요리옥, 덴푸라집, 장어요리집, 닭요리집, 메밀소바집, 초밥집, 스키야키집, 일반식당, 우동집, 오뎅집, 서양음식점, 카페다. 그 중 일본요리옥의 서울 출현은 1885년부터였다. 한성부 안에서 일본인 거류가 공식적으로 허용된 시점이며 그 때 바로 일본요리옥이 생긴 것이다. 그 후 청일전쟁과 러일전쟁, 통감부시대를 거쳐 단계별로 발달했다. 통감부시대에는 일본인 고위관료들에 의해 공식만찬회의 장소로 이용이 되었고 그 후 일제시대에도 고객층을 넓혀 가면서 안정적으로 성장해 나갔다. 일본요리옥의 유흥 요소인 게이샤도 지속적으로 증가해 1904년에 유곽의 설치, 1907년 이후에는 오키야와 권번도 설치하게 되었다. 또 일본요리옥의 요리에 있어서는 복요리, 돔요리, 자라찌개 요리, 민물고기 요리가 확인되었다. 본 연구는 일본요리옥의 실제 모습을 드러내는 것에 집중했지만 그것에 대한 충분한 분석과 다양한 요리 내용을 밝히지 못한 점에서 한계를 지닌다.;This research is aimed to demonstrate the types and characteristics of Japanese restaurants that appeared during the modern period when Japanese food was introduced, focusing on Japanese Ryōri-ya. First of all, distinct features of Japanese modern Ryōri-ya were investigated. Ryōri-ya in Japanese modern period was defined a traditional Japanese cultural space which provided dishes, alcohol liquor and entertainment. Dishes in Ryōri-ya were made of fish and vegetables, and red meat was not used. This kind of Japanese Ryōri-ya was introduced and established in Korea as Japanese started to settle in the Korean peninsula. In addition to Japanese Ryōri-ya, there were many kinds of Japanese restaurants in Seoul. To emphasize the characteristics of Japanese Ryōri-ya, Japanese restaurants in Seoul were categorized into 12 types as follows: Japanese Ryōri-ya ; tempura restaurant ; Unagi (eel) restaurant ; chicken restaurant : buckwheat noodle (Soba) restaurants ; Sushi restaurant ; Sukiyaki restaurant ; general Japanese restaurant ; Udon restaurant ; Oden restaurant ; Western restaurants ; café. Japanese Ryōri-ya appeared in Seoul from 1885. It was the moment that Japanese settlement was officially allowed in Hanseong City Administration (Hanseongbu 漢城府). Afterward, Japanese Ryōri-ya was developed in stages as Joseon (Korea) went through Sino-Japanese War, Russo-Japanese War and Japanese Residency-General rule. When Japan governed Korea under Residency-General, Japanese Ryōri-ya was used to hold official dinners by Japanese high-profile officials, and after that, it was developed steadily attracting various customers under the Japanese colonization. The Geisha, which was a component of entertainment in Japanese Ryōri-ya became more popular. Licensed quarters (Yūkaku 遊廓) were established in 1904, and Okiya (Geisha house) and Gwonbeon (Geisha call-office) were built after 1907. In terms of cuisine in Japanese Ryōri-ya, dishes of blowfish (Fugu), sea bream (Tai), soft-shell turtle soup, and freshwater fish were recognized. This study provides an in-depth look on Japanese Ryōri-ya. However, it has limitations in that analysis on Japanese Ryōri-ya was not sufficient and various dishes were not identified.
