Abstract
One-person households in Korea have almost doubled in the last ten years, and currently account for a significant portion of consumption spending. Creating new trends such as“Solo Economy” and “Singlesumer”, they are becoming leaders of the consumer market. In one-person households, food including groceries and non-alcoholic drinks is the second highest area of spending, following housing, and dining out and convenience foods are changing to cater to such needs. However, these foods contain excessive amounts of food additives in order to make them taste good and can be harmful to health as they do not have a good balance of nutrients. Recently, with increased studies on the dietary lives of one-person households in Korea, nutritional imbalance is being raised as a significant issue but so far there aren’t many services or infrastructures supporting the healthy eating of these households. Against this backdrop, this study proposes a mobile subscription service that promotes the healthy eating of single-person households and to design the service, literature research was conducted on their status and dietary lives. As they have no dependents, single-person households can spend most of their incomes for themselves so they tend to be generous on investing in themselves. However, spending habits differed by age group, so this study was limited to employed workers in their 30s, who have stable income and are main leaders of consumption. One-person households tend to have especially high spending on food, and prefer easiness such as dining out and convenience food over cooking, and with age, in addition to convenience, they consider health as an important factor. Nonetheless, studies on the services offered in Korea and other countries, found that instead of being optimized for one-person households, current food services target a variety of consumers and most of the services are delivery applications offering quick convenience foods. In the case of services promoting health, there is not enough information on how the foods or ingredients contribute to health. Based on the literature research and case studies, in-depth interviews were conducted on one-person households in their 30s, the main target of this study, to understand their actual eating habits and health needs. The findings were that although they are concerned about the health aspect of their current eating habits, due to their work, it is not easy to manage this, so they tend to regularly take nutritional supplements or alternative foods. Also, without disturbing the current living conditions centered on their work, they hope to receive information or utilize improved eating options or meal plans. Based on these findings, this study designed a service that allows one-person households to subscribe to and receive regular deliveries of healthy meal plans tailored to their life styles, identified points for improvement by testing the service on the people that participated in the in-depth interviews and ultimately tried to realize a service that satisfies the needs of the actual target consumers.
