Abstract
본 연구의 목적은 한국인의 주식임에도 불구하고 식생활 환경의 변화에 따라 점차 그 소비량이 줄어들고 있는 쌀의 이용률을 높이기 위하여 음식의 특성에 맞는 쌀의 품종을 선택하고 음식의 조리단계에서 기호도를 높힐 수 있는 최적의 조리조건을 찾아 최종적으로 우리 쌀의 소비 증진을 위한 기초 자료를 제시하고자 하였다. 이를 위하여 국내외적으로 꾸준한 소비증가를 보이고 있는 초밥을 연구 대상으로 정하였다. 문헌연구와 전문가 자문을 바탕으로 초밥용 쌀의 특성을 도출하고 표준 조리법을 확립하였다. 초밥에 적합한 쌀로 도출된 고시히까리를 대조군으로 하여 이를 포함한 국내산 쌀 8 가지 품종에 대한 전문가 적합도 평가를 실시하였으며, 동시에 기계적으로 측정한 초밥의 texture 및 이화학 검사를 실시하였고, 그 결과 초밥에 적합한 쌀 품종은 호품이 선정되었다. 밥과 초밥의 Texture Profile Analysis 실험 결과, 밥의 texture 특성에서 호품은 응집성, 점착성, 씹힘성 측정 결과는 높게 나타났고 부착성은 낮게 나타났으며, 탄력성을 제외한 모든 항목에서 고시히까리와 통계적으로 차이가 없어 비슷한 texture특성을 가지는 것으로 나타났다. 초밥의 경우 역시 호품이 경도, 응집성, 점착성, 씹힘성 측정 결과 높게 나타났고 부착성은 낮게 나타났으며, 응집성과 씹힘성 항목에서 고시히까리와 통계적으로 차이가 없어 비슷한 성질을 가지는 것으로 나타났다. 전문가 적합도에서 높은 점수를 얻은 고시히까리와 호품은 수분함량 실험결과, 비슷한 경향성을 보이지 않았다. 초밥은 밥에 10%의 배합초가 가미된 것으로 전 품종에서 밥보다 수분함량이 적었다. 색도의 실험결과 역시 적합하다고 평가된 품종간의 비슷한 경향성은 보이지 않았다. L(Lightness)값은 보람찬과 주안을 제외한 나머지 품종에서 밥보다 초밥에서 높은 수치를 보였다. 연구의 두 번째 단계로 반응표면분석법을 이용하여 초밥용 쌀 품종으로 적합하다고 선정된 호품을 대상으로 최적 배합초비 선정을 위한 실험을 실시하였다. 배합초의 주재료인 식초, 설탕, 소금을 독립변수로 설정하였으며 이화학 검사항목, 초밥의 기계적 특성, 소비자 기호도 검사항목을 반응변수로 설정하였다. 배합초 비율에 따른 초밥의 수분 함량과 pH에 가장 큰 영향을 주는 항목은 식초이며, 식초의 투입비율이 높아질수록 수분함량은 증가하였고 pH는 감소하였다. 색도의 L(Lightness)값, a((+)redness/(-)greenness)값, b((+)yellowness/(-)blueness)값은 추정된 모형을 설명하는데 적합지 않았다. L(Lightness)값은 실험범위 안에서 설탕의 혼합비율이 변할 때 감소 또는 증가하였고, a((+)redness/(-)greenness)값은 실험의 중심점에서 소금의 혼합비율을 높이면 감소하는 것을 알 수 있었다. b((+)yellowness/(-)blueness)값에 가장 큰 영향을 미치는 성분은 식초와 설탕으로, 식초의 혼합비율이 높아지면 b 값은 증가하며 설탕의 혼합비율을 높이면 감소하는 것으로 나타났다. 초밥의 기계적 특성 검사에서 경도와 응집성, 점착성, 씹힘성, 회복성에 가장 큰 영향을 주는 독립변수는 소금이며 각 항목들은 독립변수인 식초, 설탕, 소금의 교호작용에 의해서 복합적으로 영향을 받는 것으로 나타났다. 소비자 기호도 검사는 전반적 기호도, 신맛, 단맛, 짠맛, 질감, 촉촉함의 전 항목이 유의적으로 나타났으며 설탕의 배합비율이 높아질수록 모든 항목의 기호도가 높게 나타났다. 맛과 감촉특성 실험 결과 전반적 기호도는 신맛과 짠맛이 강할수록 낮게 나타났으며 단맛이 높을수록 높게 평가되었고, 촉촉한 정도가 높을수록 질감 기호도와 촉촉함 기호도 평가에서 높게 평가되었음을 알 수 있었다. 관능검사 항목을 최대로 설정하여 얻어진 수치적 최적점의 배합비율은 식초, 설탕, 소금이 각각 54.02, 39.98, 6.00이었으며 모형적 최적화에서 예측된 수치와 일치하는 것으로 나타났다. 연구결과 초밥에 적합한 국내산 쌀은 호품종이며 식초, 설탕, 소금의 함량 비율이 각각 54.02, 39.98, 6.00일 때 초밥의 배합비가 최적인 것으로 나타났다.;The purpose of this study is to provide the fundamental data for enhancement of rice consumption, in which it has been reducing due to the changes of dietary environment despite the staple food of Korean, by selecting rice variety to fit with food characteristics and seeking the optimal cooking condition to increase preference. To do this, Sushi, which has been showing a steady increase in consumption domestically and internationally, was chosen as the main object in this study. Based on literature review and expert advice, the characteristics of sushi rice were derived and then the standard recipe was established. As ‘Koshihikari’, identified to be fit for sushi, was set to be a control group, the test on the suitability of different rice cultivalrs for sushi was executed with the eight different varieties of domestic rice. Simutaneously, the texture of sushi was technically measured and physico-chemistry test was conducted. As a result, ‘hophum’ was selected as the best-fit domestic rice variety for sushi. According to the result of Texture Profile Analysis test for rice and sushi rice, Hophum as rice indicated the high score at cohesiveness, gumminess and chewiness despite the low score at adhesiveness. Plus, it has no statistical difference with koshihikari in all the features except resilience so that it has similar characteristic in texture. In case of Sushi rice, Hophum was also identified higher at the level of hardness, cohesiveness, gumminess and chewiness while adhesiveness was lower; especially it was found to be no statistical difference with Koshihikari in cohesiveness and gumminess and therefore the two varieties shares very similar traits. Koshihikari and Hophum, which all obtained a high score from the test on the suitability of different rice cultivalrs for sushi, did not show a similar tendency from the test result on moisture contents. Sushi rice, added 10 percent of seasoned vinegar to rice, had lower moisture content than rice through all varieties. According to the experimental result with regards to chromaticity, the similar tendency among the evaluated varieties was not indicated as well. Lightness value was higher in all sushi rice than rice except ‘Boramchan’ and ‘Jooahn’ varieties. In the second phase of the study, the experiment was executed with Hophum to select the optimal ratio of seasoned vinegar by using Response Surface method. Vinegar, Sugar and Salt, as the main ingredients of seasoned vinegar, were selected as independent variables. Then physico-chemical test items, the Texture profile analysis properties of sushi, and the consumer preference test items were selected as response variables. Vinegar was confirmed as the most influential element in the moisture content and pH of sushi; as the input ratio of vinegar was higher, the moisture content has been increasing while pH has been decreasing. Lightness, A((+)redness/(-)greenness), and B ((+)yellowness/(-)bluenes s)values all were not suitable to explain the inferred model. L(Lightness) value was decreasing or increasing when the mixing ratio of sugar was changing within the experimental range. A((+)redness/(-)greenness) value was found to be reducing if the mixing ratio of salt got higher from the center point of experiment. Also, as the most influential elements on the B((+)yellowness/(-)blueness) value were vinegar and sugar, the B value was increased if vinegar has higher mixing proportion while decreased if sugar has higher one. In the texture profile analysis properties of sushi, salt was the independent variable that had the greatest effect on the hardness, cohesiveness, adhesiveness, chewiness, and resilience, and the each value was affected complexly by interaction of the independent variables; vinegar, sugar and salt. At the consumer preference test, all the items regarding overall acceptablility, sour, sweet, salty taste, texture and moistness showed high significance and the higher the mixing ratio of sugar was, the higher the preference of all the values was. According to the test results on taste and texture characteristics, the overall preference became lower when sour and salty taste were stronger, higher when sweet taste was stronger and higher when moistness was stronger. The numerically optimal mixing ratio achieved by sensory test was 54.02 for vinegar, 39.98 for sugar, and 6.00 for salt respectively, and this was matched with the predicted figures at modelling optimization. The result showed that hophum was selected as the best fit to sushi, and it was expected for sushi rice to taste the best when the seasoned vinegar was composed in the ratio of 54.02 for vinegar, 39.98 for sugar, and 6.00 for salt respectively.
