조선시대의 조리기구에 관한 연구

Abstract

식생활 문화는 자연환경에 의해 결정되는 재료의 공급내용을 그 기본으로 하여 정치·경제·문화·사회 등의 변천에 영향을 받으면서 형성되어지는 다원적인 문화의 소산인바, 한국음식이 변천 완성되는 조선시대의 조리법과 이에 사용되는 조리기구를 조사·정리하여 당시의 식생활문화 양상을 알아 보는데 그 목적을 두었다. 이를 위해 조선시대 이전의 조리기구들을 각 시대별로 알아보았고, 조선시대의 문헌인 「음식디미방」「증보산림경제」「임원십육지」「규합총서」를 통해 조리법을, 「훈몽자회」「정례의궤」「증보산림경제」「진찬의궤」「사류박해」「제물평」을 통해 조리기구를 조사하여 재료와 기능별로 분류하고 조리기구의 변천과 각 조리법에 사용된 조리기구를 조사·분석하였다. 또한 각 조리법에 따른 조리기구의 사용빈도를 포착하였다. 그 결과 조리기구는 재질과 기능에 따라 다양하게 선택되었으며, 현재 사용되고 있는 조리기구의 대부분이 조선시대에 이미 사용되었음을 알 수 있는데, 이는 조선시대의 조리기구가 현대 조리기구의 모체가 되었음을 말해주는 것이다. 또한 조리법의 발달은 조리기구의 발달을 촉진하였음은 물론 이렇게 발달된 조리기구는 역으로 새 조리법을 만들어 내어 식생활 완성에 중요한 역할을 하였음을 알 수 있다.;Generally speaking Food culture, largely depends on the contents of some capable material which was characterized by the natural circumstances, is the ultimate product of multidimensional civilization formed inclusively by the various social back grounds. What I wish to do here is, therefore, to suggest the extent and importance of the cookery and the cooker, on the whole, used in Yi-Dynasty that should show us some trends and respects about food culture of those days. For these further purposes, above all, most of the cooker were surveyed in advance that had used before Yi-Dynasty, I'm much in-debted to these references; especially in cookery to (Eumsikdimibang) (Cheungbosanlimkyungje) (Limwonsipeukgi) (Kuhapchongseo) and in cooker to (Hunmongjahoi) (Chungraieukue) (Chungbosanlimkyungje) (Jinchaneukue) (Saryuparkhai) (Chemulpung) thus, the procedure and classification of cooker suitable for the individual cookery and their use for proper subjects are also capable through these books and the proficiencies cooker in individual cookery are reviewed, too. From this conclusion we can recognize that in most cases, specifically developed cooker that is now at our hand, was in use already in Yi-Dynasty and cooker itself was developed too in its, quality of material and in function according to man's request. So it is possible to believe that most cooker used in Yi-Dynasty is the traceable archy type from our start. To trace the development of cookery which comes to the importance of cooker, further more, is also available for the understanding of improvement of cooker to their result and the conversely devised assumption about it also available.
