교육계획안에 나타난 요리활동 분석

Abstract

본 연구의 목적은 일일교육계획안에 나타난 유아 요리활동을 분석함으로써 유치원에서 다루어지는 요리활동의 운영 형태나 내용들을 알아보는데 그 목적이 있다. 이에 따른 구체적 연구 문제는 아래와 같다. 1. 교육계획안에 나타난 유치원의 요리활동 종류는 어떠한가? 2. 교육계획안에 나타난 유치원의 요리활동 재료는 어떠한가? 3. 교육계획안에 나타난 유치원의 요리활동 방법은 어떠한가? 본 연구의 대상은 서울 시내에 소재한 유치원에 재직 중인 경력 3년 미만의 교사 24명이 작성한 일년 동안의 주간교육계획안과 일일교육계획안에 나타난 요리활동 205개를 분석하였다. 본 연구에서는 요리활동의 종류 및 재료를 분석하기 위해서는 교육계획안에 나타난 활동 종류를 모두 나열하고 활동에 사용된 재료는 한국영양학회에서 제시한 식품군에 따라 분석하였고 요리활동 방법에서는 물리적 변화와 화학적 변화를 기준으로 요리활동의 재료 변화와 조리 방법을 분석하였으며 요리활동에서의 집단 크기를 분석하였다. 본 연구의 결과를 요약하면 다음과 같다. 첫째, 일일교육계획안에 나타난 요리활동의 종류를 월별로 범주화하였다. 그 결과 1년간 시행된 요리활동의 종류는 41개로 나타났다. 좀 더 상세히 보면 3월의 요리활동 종류는 2종류, 4월에는 요리활동 종류가 6종류로 점차 늘어나며6월의 요리활동 종류는 9종류로 제일 많이 나타났다. 또 3월에 나타난 요리 종류 중에서는 불을 사용하는 종류가 없었으나 4월에는 1종류, 5월에는 4종류, 6월에는 7종류로 점차 늘어났으며 11월에는 모든 활동 종류가 불을 사용하였다. 횟수에 있어서는 월별 요리활동이 가장 많이 이루어진 7-8월이 32회(15.6%)로, 그 다음이 9월의 요리활동으로 31회(15.2%), 12월의 요리활동은 28회(13.7%), 6월과 11월의 요리활동은 각각 21회(10.3), 4월은 23회(11.2%), 10월은 18회(8.8%)로, 3월과 1-2월이 각각 7회(3.3%), 5회(2.2%)로 나타났다. 둘째, 일일교육계획안에 나타난 요리활동의 종류 41개의 대표적인 재료를 한국영양학회에서 제시한 5가지 기초 식품군으로 분석하였다. 그 결과 과일 및 야채류인 3군이 25회, 곡류 및 감자류인 4군이 23회로 나타났으며 유지류인 5군이 20회, 어육류와 알류, 콩류인 1군이 17회, 우유 및 유제품이 17회로 나타났다. 셋째, 요리활동 방법에 따른 재료들의 변화를 분석한 결과를 보면 재료의 화학적 변화 가 107회(52.2%), 재료의 물리적 변화 가 98회(47.8%)로 나타났다. 요리활동의 방법에 있어서는 단순 조리 방법이 41회, 열기구 사용 조리 방법이 24회, 기타가 28회(30.1%)로 나타났다. 이 결과를 좀 더 상세히 보면 단순 조리방법에서는 섞기 가 21회로 제일 많이 나타났으며, 열기구를 사용한 조리 방법에서는 부치기 가 8회로 제일 많이 나타났다. 요리활동시의 집단크기는 소집단 구성이 148회(72.2%), 중집단이 41회(20.0%), 대집단이 16회(7.8%)로 나타났다. 소집단 구성에 있어서는 자유선택시간에서의 소집단이 102회(49.7%)로 제일 높았으며 수업활동에서의 소집단은 46회(22.5%)였다.; This study was attempted to examine the operation and contents of cooking activity in kindergarten by analyzing children s cooking activity shown in the daily lesson plan. The research questions of this study are as follows: 1. What are the kinds of cooking activities in kindergarten? 2. What are the materials of cooking activities in kindergarten? 3. What are the methods of cooking activities in kindergarten? The subjects of this study are 205 cooking activities in the weekly and the daily lesson plans described by 24 teachers, who had engaged in the kindergartens of Seoul less than for 3 years experiences. In this study, all the cooking activities in the lesson plans were enumerated to analyze kinds and materials of them, and materials used in the cooking activities were analyzed according to the food groups suggested by the Korean Nutrition Society. For analysis of methods of the cooking activities, they were divided into type of cooking, size of group, teaching method, and sampling type. The findings of this study are as follows: First, kinds of cooking activities in the daily education plan were categorized by months. As the result, they were shown 32 times(15.6%) in July and August, 31 times(15.2%) in September, and 28 times(13.7%) in December. Second, representative materials in the 41 cooking activities were analyzed according to the 5 basic food groups. As the result, the 3rd group(fruit and vegetable) was shown 25 times, the 4th group(cereals and potatoes) 23 times, and the 5th group(oils and fats) 18 times by order. Third, for change in the materials by methods of the cooking activities, change by heat was shown 107 times(52.2%) and change by physical handling 45 times(22.0%). For type of cooking, was the most shown as 41 times(44.0%), cooking with knife 28 times(30.1%), and cooking with heating apparatuses 24 times(25.9%). Fourth, for size of group in the cooking activities, small group was shown 146 times(72.2%), middle group 41 times(20.0%), and large group 16 times(7.8%). For type of sampling in the cooking activities, sampling as a snack was shown 165 times(80.5%), sampling as a side dish 32 times(15.6%), and sampling as lunch 8 times(3.9%).
