A Cookbook for Traditional Korean Weddings

Abstract

본 논문의 목적은 상세한 레시피와 역사적 고찰을 통해 한국의 고유한 전통혼례 음식을 외국인들에게 소개하고자 하는 데 있다. 한국의 전통 혼례 음식은 매우 가치 있는 문화적 산물이자 현재에도 그 전통이 유지되고 있음에도 불구하고 이러한 한국의 혼례 음식이 아직 외국인들에게 잘 알려져 있지 않으며 혼례음식이라는 주제로 된 영어 서적이나 자료가 아직 제대로 마련되어 있지 않다. 따라서 본 논문은 한국의 전통 혼례 음식이 가지는 의미와 또 그 요리법을 영어로 설명함으로써 외국인들에게 한국의 전통 혼례 음식을 소개하고 실제 생활에서 경험해 볼 수 있도록 하고자 제작되었다. 본 논문에 수록된 한국 전통 혼례에 관한 요리책은 외국인들의 이해를 돕기 위해 풍부한 역사적, 문화적 정보들을 제공하고, 한국 전통 혼례에 주로 사용되는 음식 26 가지를 소개한다. 26 가지의 레시피들은 윤숙자 교수가 그 의 저서 『한국 혼례 음식』에 수록한 혼례 음식들을 바탕으로 선택되었다. 각각의 레시피에는 필요한 배경지식과 사진이 함께 수록되었다. 이 논문의 전반부는 본 논문 작성법에 대해 기술한다. 레시피를 작성하는 데에 있어서 사용된 여러 가지 원리와 원칙들을 다루고, 또한 사례들을 통해 실제로 레시피 안에서 그 원리가 어떻게 적용되었는지 살펴보았다. 이러한 원리들은 효과적인 레시피 작성과 한국 전통 음식 연구에 길잡이를 마련하고자 제시되었다.;The purpose of this M.A. thesis is to introduce traditional Korean wedding food to foreigners by providing descriptive recipes with relevant historical and cultural information. Korean wedding food is a highly valued and wellpreserved cultural product of Korea; however, there has been no attempt to produce an English book on the topic. This project, thus, aims at making an English language cookbook of traditional Korean wedding food so that foreigners may experience and enjoy authentic Korean food in their lives. The cookbook begins with background information focusing on the historical changes and procedures of traditional Korean wedding ceremony for the readers’ better understanding of Korean wedding culture. The 26 recipes for Korean wedding food were selected from the book, Food for Korean Weddings, written by Sook-ja Yoon, and are described together with appropriate background information and photos. A theoretical paper prefaces the thesis. This paper examines several useful principles of recipe writing and presents examples that demonstrate how the principles were applied to the recipe writing in this thesis project. Those principles are presented with the hope that they can give useful hints and guidelines for effective recipe writing and for further research into authentic, traditional Korean cooking.
