Abstract
오늘날 현대인들은 식품의 양적 섭취뿐 아니라 적절성, 질적 균형성, 다양성에 큰 관심을 갖고 있다. 그러나 바쁜 일상으로 인해 건강한 식습관과 식생활을 유지하는데 많은 시간을 투자할 수 없는 상황이다. 따라서 편리하면서 건강을 유지 및 개선 할 수 있는 식품에 대해 요구가 증가하고 있다. 건강기능식품연감에 따르면 소비자의 81%는 식품을 선택할 때 건강유지나 증진에 도움을 주는 것을 선택하고, 75%는 영양소가 강화된 식품을 선택하고 있어 다양한 영양 강화 제품의 개발에 중요성이 커지고 있다. 이렇게 건강하고 안전한 먹거리에 관심이 높아지면서 주식 이외에도 저칼로리, 고단백, 슈퍼곡물로 만든 스낵 등이 새로운 시장으로 확대되고 있다. 일반적인 스낵은 고열량, 고지방으로 기호를 목적으로 소비되는 식품으로, 섭취에 있어 소비자들에게 즐거움을 주는 동시에 건강함도 줄 수 있는 제품을 개발할 필요성이 제기되고 있다. 하지만 건강하고 안전한 스낵제품이 많지 않으며 미국 등의 해외시장에 비해서도 제품의 종류가 부족한 실정이다. 소비자들에게 과거의 스낵은 섭취를 피해야할 음식이었던 반면, 현재 스낵은 합리적이면서 편리한 식사 대용품으로 인식되고 있으며 Darren Seifer 분석가는 소비자들이 스낵을 더 이상 불필요한 칼로리라고 생각하지 않으며, 스낵을 통해 단백질 및 섬유질 등 추가적으로 필요한 영양분을 얻을 수 있다고 생각한다 (Darren, 2015). 영양학적으로 성분구성이 우수한 고단백스낵은 기호식품 섭취로 인한 즐거움과 편리성까지 갖추었으며 조금만 먹어도 포만감을 느낄 수 있어 효과적이다. 고단백 식이는 다이어트를 위해서도 많이 섭취하고 있으며, 따라서 고단백 식품에 대한 관심도 매우 증가하고 있다. 본 연구의 목적은 건강 라이프스타일에 따른 고단백스낵의 구매 태도와 행동에 미치는 영향을 연구하는 것이다. 고단백스낵의 주요 구매 고객인 20대, 30대 남녀를 대상으로 설문조사를 실시하였으며, 최종적으로 451부의 설문자료를 분석하였다. 본 연구의 주요 결과는 다음과 같다. 조사 대상자의 건강 라이프스타일을 요인 분석한 결과 총 8가지 요인으로 도출되어, 각각 건강식생활 및 건강관리요인, 체형관심요인, 합리적 생활요인, 운동요인, 흡연요인, 음주요인, 외모추구요인, 섭취충족요인으로 명명하였다. 건강 라이프스타일 요인을 바탕으로 군집분석을 실시한 결과, 각각 100명, 113명, 109명, 129명으로 군집 1은 외모를 중요하게 생각하는 ‘외모추구집단 (Appearance-seeking group)’, 군집 2는 다른 군집보다 흡연요인이 유의적으로 높은 것으로 분석되었으며 (p<0.001), 건강관심과 음주요인도 높아 건강관리에도 관심 있으며 자유롭게 흡연과 음주를 즐기는 전형적인 20, 30대의 생활을 반영한 집단으로 ‘자유로운 섭취와 생활 추구집단 (Free living group)’, 군집 3은 건강을 고려한 식생활 요인에 대해 높은 경향을 보인‘절제된 관리집단 (Moderated management group)’, 군집 4는 모든 항목에 대해 5점 부근으로 나타나 모든 건강 라이프스타일에 대해서는 관심이 적고 체형에 대해서만 관심이 높은 경향을 보인‘건강 저관심집단 (low interest in health lifestyle group)’으로 도출되었다. 고단백스낵 선택속성을 요인 분석한 결과 총 4가지 요인으로 도출되었으며, 각각의 요인은 신뢰요인, 정보요인, 감각과 가격요인, 외형요인으로 명명하였다. 건강 라이프스타일에 따라 신뢰요인을 제외한 모든 요인에서 유의적인 차이가 나타났다 (p<0.001). 절제된 관리집단과 건강 저관심 집단은 다른 집단보다 감각 및 가격 요인을 가장 중요하게 생각하였고, 자유로운 섭취와 생활 추구집단은 신뢰요인을 가장 중요하게 생각하였다. 건강 라이프스타일에 따른 고단백스낵에 대한 건강 정도 인식 (p<0.05), 기능성 인식 (p<0.05), 가격에 대한 인식 (p<0.001), 맛의 익숙함 (p<0.001), 향미의 긍정적(p<0.001), 기호도 (p<0.001)에 대해 일원분산분석을 실시한 결과 유의적인 차이가 나타났다. 절제된 관리집단이 자유로운 섭취와 생활 추구집단, 외형추구집단, 건강 저관심집단에 비해 건강정도 인식과 맛의 익숙함, 향미에 대해 긍정적인 것으로 분석 되었다. 반면 건강 저관심집단은 고단백스낵을 부정적으로 생각하고 있는 것으로 분석되어, 다른 집단에 비해 그 고단백스낵에 대한 부정적으로 생각하는 비율이 높은 것으로 나타났다. 건강 라이프스타일에 따른 고단백스낵의 구매 행동에 대해 분석한 결과 고단백 스낵에 대한 섭취빈도는 외형추구 집단에서 가장 낮고, 자유로운 섭취와 생활 추구집단에서 가장 높게 나타났다. 고단백스낵의 섭취 목적으로는 자유로운 섭취와 생활 추구집단을 제외한 나머지 집단에서는 일반스낵보다 건강해서라는 이유가 가장 높았으며, 자유로운 섭취와 생활 추구집단은 단백질 섭취를 위해 고단백스낵을 섭취하고 있으며, 그 다음으로는 모든 집단에서 포만감을 느끼기 위해 섭취하고 있었다. 건강 라이프스타일에 따른 고단백스낵의 만족도, 재구매 및 추천의사에 대해서 카이제곱 검정을 실시하였다. 건강라이프 스타일 군집 별로 고단백스낵에 대한 전반적인 만족 (p<0.05), 한 끼 식사로 충분 (p<0.001)에 대해 유의적인 차이가 나타났다. 전반적으로 만족하는지 분석한 결과, 자유로운 섭취와 생활 추구집단과 절제된 관리집단이 다른 집단에 비해 높았다. 고단백스낵이 한 끼 식사로 충분한지를 분석한 결과 역시 자유로운 섭취와 생활 추구집단이 가장 높았으며, 외형추구집단이 다른 집단보다 낮은 것으로 분석되었다. 고단백스낵을 주변에 추천할 의향이 있는지에 대해서는 자유로운 섭취와 생활 추구집단이 다른 집단보다 높게 분석되었다. 반면 섭취경험이 있는 고단백스낵의 재구매와 고단백스낵의 재이용의향에 대해서는 유의적인 차이가 나타나지 않았으나 두 문항모두 건강 저관심집단이 다른 집단에 비해 낮은 것으로 나타났다. 고단백스낵에 대한 소비자의 요구를 확인하기 위해 선택속성 중 속성에 대해 중요도와 성취도를 조사하여 중요도-성취도분석(IPA)을 수행하였다. IPA 분석 결과 I 사분면에는 고단백스낵의 맛, 향미, 가격, 원재료, 영양성분 및 영양정보, 단백질함량, 열량, 중량(용량), 위생 및 안전성, 할인행사 및 이벤트 속성이 이에 속한다. III 사분면에는 고단백스낵의 모양, 색깔, 사이즈, 포장 및 디자인, 광고, 브랜드, 인지도가 속하며 본 연구에서는 II, IV 사분면에 해당하는 항목은 조사되지 않았다. 이 연구 결과를 바탕으로 고단백스낵에 대해 고객이 중요하게 생각하고 있는 선택속성과 만족하지 못하고 있는 선택속성을 중점적으로 하여 보완하는 방향으로 고단백스낵에 대한 개발 및 연구가 필요하다. 본 연구의 가설은 다음과 같으며 H1 ; 개인의 건강 라이프스타일은 고단백스낵에 선택속성에 영향을 미칠 것이다. H2 ; 단백질 스낵에 대한 선택속성은 고단백스낵의 인식 및 태도에 영향을 미칠 것이다. H3 ; 단백질 스낵의 인식 및 태도는 고단백스낵의 구매 및 만족도에 영향을 미칠 것이다. 본 연구의 가설을 검증한 결과는 다음과 같다. 첫째, 건강 라이프스타일이 고단백스낵 선택속성에 미치는 영향을 분석한 결과 유의미한 정의 영향을 미치는 것으로 조사되었다. 둘째, 고단백 스낵 선택속성인 신뢰요인, 정보요인, 감각 및 가격 요인, 외형요인이 고단백스낵에 대한 인식 및 태도가 유의미한 정의 영향을 미치는 것으로 나타났다. 셋째, 고단백스낵에 대한 인식 및 태도가 고단백스낵의 구매 및 만족도에 미치는 영향을 단순 회귀 분석한 결과 유의미한 정의 효과를 미치는 것으로 분석되었다. ;Nowadays, modern people have greater interest not only in quantitative intake of food but also in qualitative balance, appropriateness and diversity of food. However, they cannot spend much time on healthy eating due to their busy life. According to the Health Functional Foods Yearbook, 81% of consumers choose food which help maintaining or promoting their health, and 75% choose nutrient-enriched foods. As result, the development of various kind of nutrition-enhancing products became more important. As interest in healthy and safe food has increased, markets for snacks made of low-calorie, high-protein, and super-grain are expanding. Generally, snacks are high-calorie, high-fat foods which are considered as unhealthy foods but people consume them for their taste. While consumers' demand for healthy and safe snacks is high, there is a lack of products compared to US and other overseas markets. High-protein snacks are not only nutritionally great but also have good taste and convenience as favorite food. In addition, it is effective because people can feel fullness even if they eat little. Many people consume high - protein food for their diet, and interest in high-protein foods are increasing. This study is to investigate the effect of health lifestyle on purchasing attitude and behaviors of high – protein snacks. The survey was conducted for 20s and 30s who are major purchasers of high - protein snacks. Finally, 451 samples were analyzed. The main results of this study are as follows. As a result of factor analysis of the health lifestyle of the subjects, 8 factors were found. 8 factors were defined as the factor of health diet and health care, body type interest factor, rational life factor, exercise factor, smoking factor, drinking factor, appearance-seeking factor, and free-living factor, respectively. As a result of cluster analysis based on health lifestyle factors, each cluster consists of 100, 113, 109, 129 people respectively. Cluster 1 was analyzed as ‘Appearance-seeking group’, which regards appearance important, and cluster 2 was ‘Free-living group’, in which smoking factor was significantly higher than other clusters (p<0.001). Cluster 2 reflect the typical lifestyle of 20s and 30s who are interested both in health care and drinking. They consider their healthy while enjoying smoking and drinking culture freely. Cluster 3 was analyzed as ‘Moderated management group’, which showed higher tendency toward health-related dietary factors, and cluster 4 was analyzed as ‘Low interest in healthy lifestyle group’, which was close to 5 points for all items. They showed little interest in all health lifestyle and only showed high interest in body type. As a result of factor analysis of high-protein snack selection attributes, four factors were derived. Each factor was named as trust factor, information factor, sensory and price factor, and external factor. There was a significant difference in all factors excluding trust factor according to health lifestyle (p<0.001). 'Moderated management group' and ‘Low interest in healthy lifestyle group’ considered sensory and price factor as the most important factor in diet while ‘Free living group’ considered trust factor as the most important factor. Healthy perception of high - protein snacks according to health lifestyle (p <0.05), functional perception (p<0.05), perception of price (p<0.001), familiarity of taste (p<0.001), positive flavor (p<0.001) and preference (p<0.001) showed significant difference in One-way ANOVA analysis. ‘Moderated management group’ was analyzed to be more positive about health awareness, familiarity of flavor, and flavor than other three group, ‘Free-living group’, ‘Appearance-seeking group’ and ‘low interest in healthy lifestyle group’. On the other hand, ‘low interest in healthy lifestyle group’ showed higher proportion than other groups in degree to consider high-protein snack negatively. As a result of analyzing the purchasing behavior of high - protein snacks according to health lifestyle, the frequency of consumption of high - protein snacks was the lowest in 'Appearance-seeking group' and highest in “Free-living group’. ‘Healthier than normal snacks’ was highest for purpose of intake of high-protein snacks in three groups except for ‘Free-living group’ consumed high-protein snacks for protein intake, followed by to feel fullness. Chi-square test was conducted to investigate satisfaction, repurchase and recommendation of high - protein snack according to health lifestyle. There was a significant difference in overall satisfaction with high-protein snacks (p<0.05) and with enough for single meal (p<0.001) by health lifestyle clusters. As a result of analysis for overall satisfaction, ‘Free-living group’ and 'Moderated management group' showed higher satisfaction than other groups. As a result of analysis whether high- protein snack is enough for one meal, ‘Free-living group’ showed the highest level as well and 'Appearance-seeking group' showed lower level in response than other groups. ‘Free-living group’ was more likely to recommend high-protein snacks to people around them than the other groups. On the other hand, there was no significant difference in intention to re-purchase and re-use of high-protein snacks. ‘Low interest in healthy lifestyle group’ showed lower level in response than other three groups. In order to confirm consumer 's demand for high-protein snacks, we conducted the Importance - Performance Grid Model Analysis (IPA) after examining the importance and achievement of attributes among selection attributes. As a result of the IPA analysis, in the quadrant I, the attributes of taste, flavor, price, raw materials, nutrion element and nutritional information, protein content, calories, weight (capacity), hygiene and safety, promotions and event were involved. In the quadrant IIII, the attributes of shape, color, size, packaging and design, advertisement, brand, and awareness of high-protein snacks were involved. In this study, items corresponding to the quadrant II and IV were not investigated. Based on the results of this study, it is necessary to develop a study in a way supplementing selection attributes which consumers consider important and which consumers do not satisfy. Hypothesis for this study are as follows. H1: Individuals’ health lifestyle will affect selection attribute of high-protein snack. H2: The selection attribute of high-protein snack will affect perception and attitude on high-protein snack. H3: The perception and attitude on high-protein snack will affect purchase and satisfaction of high-protein snack. The results of this study are as follows. First, the effects of health lifestyle on high-protein snack selection attributes were analyzed and found to have a significant positive effect. Second, trust factor, information factor, sensory and price factor, and external factor which are selection attributes of high-protein snack, have a significant positive effect on perception and attitude on high-protein snack. Third, the perception and attitude on high-protein snacks showed a significant positive effect on purchase and satisfaction of high -protein snacks as a result of a simple regression analysis.
