Abstract
Thermal processing of foods for the shelf-life extension can lead to undesirable changes such as the destruction of nutrients, changes in texture, and fragrance loss. Intense pulsed light (IPL) is an excellent alternative or complement to conventional thermal or chemical destruction for ensuring safe foods with satisfactory nutritional and organoleptic qualities by using the high peak power and short-duration pulses of a broad spectrum light to the food surface. The objective of this study was to determine the inactivation effects of the IPL on pathogenic microorganisms in various liquid food products and to elucidate the relationship between sterilization effects and the characteristics of liquid foods. In mineral water and isotonic beverage, 7.0 log reduction of the Pseudomonas aeruginosa were obtained with IPL treatment at energy density of 44.6 mJ/cm^2/s in just 5 s. IPL treatment at 44.60 mJ/cm^2/s produced about 7.0 log of the bactericidal effect in apple juice for 60 s and less than 1.0 log reduction were shown in other liquid samples. A high transparency has a decisive effect on the sterilization effect because it allows the intensity of the IPL to be preserved as it penetrates into the sample. Mineral water, isotonic beverage, and apple juice which have high value of bactericidal effect, indicated 0.3631, 0.1778, and 0.0617 of transparency value, respectively. The rest samples were shown lower value of transparency. High value of optical penetration depth of liquid samples could also be an important factor in sterilization effect due to the great light permeability. In case of mineral water and isotonic beverage, pulsed light was scattered when the pulsed light went through these samples. Optical penetration depth of apple juice was 4.95 cm and the rest of the samples had less than 2.1 cm. Lightness was also important factor in sterilization effect of IPL. The value of mineral water, Isotonic beverage, and apple juice were 87.79, 85.67, and 84.91, respectively. So when pulsed light treated in the liquid, the maintenance of its energy during pass through the sample is an important factor. No correlation was found between the inactivation level of microorganisms and pH. The obtained results indicate IPL has the potential to be used as a decontamination method, but further studies should determine the distinct physical and chemical properties that influence the effectiveness of IPL treatment.;식품 산업에서는 현대인의 생활패턴에 발맞춰 가열, 냉동, 건조, 화학적 처리 등 식품에 여러 가공처리를 해왔다. 최근 소비자들의 건강에 대한 높은 관심과 천연 상태의 품질을 오래 유지할 수 있는 식품을 요구하면서 비가열 살균 기술 (Nonthermal process) 에 대한 관심이 높아지고 있다. 비가열 살균 기술 중의 하나인 광펄스 살균 기술 (Intense pulsed light sterilization technology) 은 에너지가 강한 전 파장대의 빛을 단시간에 식품에 조사하는 기술로, 소비자들에게 우수한 품질의 천연 상태 식품을 제공할 수 있는 훌륭한 살균 기술이다. 본 연구에서는 시중에 유통되고 있는 일곱 가지 액상 음료 제품 (생수, 이온음료, 사과주스, 오렌지주스, 포도주스, 커피음료, 우유)에 광펄스 처리하여 Pseudomonas aeruginosa 의 사멸 효과를 확인하였고, 살균 효과에 영향을 주는 인자들을 분석하여 광펄스 살균 기술의 상업적 가치를 알아보고자 하였다. 에너지밀도 44.6 mJ/cm^2/s 조건에서 생수와 이온음료는 4초 이내에 7 log 이상의 사멸 효과를 보였다. 사과주스의 경우 60초 이내에 7 log 이상의 사멸 효과를 나타냈으나 나머지 음료의 경우에는 10분 처리 후에도 1 log 미만의 효과를 보였다. 광펄스 살균 효과에 영향을 미치는 식품 특성 인자를 분석하기 위해 색, pH, transparency, optical penetration depth 네 가지 물리적 및 화학적 특성이 측정되었으며 색 특성 중 lightness와 transparency, 그리고 optical penetration depth 가 살균 효과에 영향을 미치는 것으로 파악되었다. 특히 사멸 효과가 높았던 생수와 이온음료의 경우 lightness 수치가 각각 89.14, 89.52로 나머지 음료들에 비해 월등히 높았으며 optical penetration depth 측정 결과 pulsed light이 두 액상을 통과하면서 빛의 산란 효과를 일으키며 기존의 빛의 에너지 밀도 값보다 더 높은 값을 지니는 것을 확인하였다. 색 특성 중 a 와 b value, 그리고 pH 는 광펄스를 통한 미생물의 사멸효과와의 관계가 보이지 않았다. 광펄스를 액상 식품에 적용 할 때, 처리하는 빛이 액상을 통과하면서 그 에너지가 분산되거나 식품에 흡수되지 않고 얼마나 잘 유지하는지가 가장 중요하며, lightness, transparency, 그리고 optical penetration depth 가 그 기준 및 척도가 될 수 있다. 현재 유통되고 있는 대부분의 액상 식품은 대부분 가열 처리 되고 있으며 그로 인한 영양소 파괴, 식품 품질의 손상 등의 한계점을 극복하기 위한 새로운 살균 기술이 요구되고 있다. 불투명한 액상 식품 내로 pulsed light 가 효과적으로 투과될 수 없다는 문제점을 보완하면 IPL은 액상 식품의 훌륭한 대체 살균 방법이 될 수 있으며, 나아가 분말 식품, 해산물, 과채류 등 더욱 넓은 범위의 식품군에 적용할 수 있는 살균 방법으로서의 가능성이 기대되는 바이다.
