Abstract
본 연구는 두 가지 평가조건에서 항목수와 크기를 달리한 항목척도(10 cm-9점 척도, 20 cm-20점 척도)와 길이를 달리한 선척도 (10 cm-선척도, 20 cm-선척도)를 사용하여 쇠고기 수프와 젤라틴 디저트의 특성강도를 평가하였을 때에 나타나는 검사원의 식별능력을 비교하였다. 쇠고기 수프의 경우에는 NaCl의 농도를 달리하여 (16, 23, 32, 45, 64, 91, 128, 181, 256, 362 및 512 mM) 짠맛의 강도를 평가하였으며, 젤라틴 디저트의 경우에는 설탕 수준을 달리하여 (64, 91, 128, 181, 256, 362, 512, 725, 1024, 1448 및 2048 mM) 단맛의 강도를 평가하였다. 두 식품의 특성 평가 시 점수를 정정하거나 이전 시료를 다시 맛 볼 수 없도록 한 조건 (조건 1)과 점수정정과 다시 맛보는 것을 모두 허용한 조건 (조건 2)에서 각 평가조건별로 24명의 다른 검사원이 4 가지 척도를 사용하여 짠맛이나 단맛 강도를 평가하였다. 쇠고기 수프와 젤라틴 디저트 모두 순위평점법인 조건 2에서 평가하였을 때 식별오류가 감소하였다. 또한 종류와 크기를 달리한 척도를 비교한 결과, 두 가지 식품의 모든 조건에서 20 cm-20점 척도가 가장 적은 식별오류를 나타내었고, 항목척도가 선척도에 비해 식별오류가 적은 것을 볼 수 있었다. 항목 척도는 항목의 수가 늘어날 때 식별력이 높아지는 데 반해, 선척도는 대부분의 경우 길이에 따른 식별력의 차이를 보이지 않아, 검사원이 척도의 종류에 따라 평가하는 방식이 다르다는 것을 알 수 있었다. 식별오류를 다른 시료에 같은 점수를 주는 오류와 낮은 농도의 시료에 역으로 높은 점수를 주는 오류로 나누어보았을 때, 두 조건에서 모두 서로 다른 농도에 같은 점수를 준 오류는 항목수가 적은 척도가 많았고, 역점수를 준 오류는 항목수가 많은 척도에서 더 많이 유발되었다. 선척도의 경우, 길이에 따른 경향은 그리 크지 않았으며, 조건 2에서는 조건 1에 비해 같은 점수를 주는 오류가 크게 감소한 반면, 역 점수를 주는 오류는 오히려 약간 증가하는 것을 볼 수 있었다. 검사자들은 20 cm-20점 척도를 가장 식별력이 높다고 생각하고 선호하였지만 사용하기 어려워하는 것으로 조사되었다. 이 실험 결과, 점수의 정정과 시료를 다시 맛보는 것을 허용하는 순위평점법에서 항목의 수가 충분히 주어진 항목척도를 사용할 때 검사원의 식별력이 가장 높아지는 것을 알 수 있었다. 그러므로 항목수가 많은 척도를 사용하는 것이 검사원들의 식별력을 향상시킬 수 있어 검사원을 훈련하는데 소요되는 시간이나 노력 비용을 절감시킬 수 있는 보다 효율적인 방법이라고 사려된다. ; Rating scales are widely used to measure the intensity of sensory attributes and it is important to study their relative validity. A comparison of different types of unstructured category and line scales was made under two different experimental protocols, to determine which was most prone to discrimination errors. Judges rated the saltiness intensity of beef flavored soup and the sweetness intensity of orange flavored gelatin desserts containing 11 different NaCl or sucrose concentrations, respectively, using 4 different rating scales: a 9-point category scale (10cm long); a 20-point category scale (20cm); a 10cm line scale; a 20cm line scale. Two experimental protocols were used by different groups of 24 judges: Protocol 1 (traditional protocol) allowed no retasting and access to prior scores was denied, and Protocol 2 (rank-rating) allowed retasting and prior scores could be reviewed and altered. Judges used each scale during separate experimental sessions. Discrimination errors were noted for each type of scale. In beef flavored soup, category scales showed significantly lower discrimination errors than line scales and 20-point category scale was still better than 9-point scale under both experimental protocols while there was little difference between two line scales. Rank-rating produced fewer errors than the traditional protocol. Similar trends were noted in gelatin dessert but the differences among the scale types and protocols were not as marked as in beef flavored soup. Subjective reports indicated that judges preferred the 20-point category scale and felt they could discriminate better when using it, although they found it the most difficult one to use. It was noted that a category scale with more categories and allowing judges to retaste reduced discrimination errors. The number of categories in a category scale or the length of a line scale should be considered, depending on the number of stimuli to be evaluated.
