유치원에서의 요리활동에 관한 사례연구

Abstract

본 연구는 Bank Street 프로그램, 구성주의 프로그램 그리고 우리나라 유아교육 지도자료집에 나타난 요리활동을 기초로 하여 유아에게 적합한 요리표를 구성해보고, 요리활동을 읽기와 연관하는 방안을 탐색하고 유아가 주도한 요리활동에서 일어나는 문제상황 및 해결양상을 살펴보고자 하는데 목적이 있다. 위와 같은 목적에 따른 연구문제는 다음과 같다. 1. 유치원 유아의 요리표 읽기에 관한 기회, 흥미, 능력은 어떠한가? 2. 유치원 유아의 요리활동에 나타난 문제상황 및 해결양상은 어떠한가? 3. 유치원 유아가 선호하는 요리활동은 어떠한가? 연구 대상은 서울시에 위치한 g유아원의 원아 중 요리하기를 원하는 6명의 5세 유아로 하였다. 연구문제 1,2는 요리활동의 과정을 훈련받은 관찰자가 기록한 후 B.S.Engel이 사용했던 방법으로 분석하였다. 연구문제 3은 10가지 요리활동이 끝난 후 검사지를 이용하여 유아에게 개별적으로 질문하였다. 연구결과는 다음과 같다. 1. 유아는 요리표에 의존하여 요리 활동을 실시함으로써 요리표 읽기의 기회를 제공받았다. 글자를 읽는 유아는 요리표 읽기를 통해 새로운 어휘를 배울 수 있는 기회가 되었다. 글자를 못 읽는 유아는 요리표 읽기를 통해 왼쪽에서 오른쪽으로, 위에서 아래로 글자가 진행되는 것을 알 수 있었으며, 그림과 글자를 연결하여 유아의 생각이 포함된 방법으로 읽었다. 유아는 요리사가 되었을 때 읽기에 보다 더 많은 흥미를 나타내었다. 유아는 그림, 한 단어, 그림과 글자가 포함된 요리표를 쉽게 읽었으며 문장 요리표는 정확하게 읽기 힘들었다. 2. 요리 활동을 전개하는데 있어 요리사 선정과 요리 활동의 계획, 실시 및 평가 과정에서 유아가 해결해야 하는 다양한 문제 상황이 발생하였다. 요리 실시 과정에서 유아가 가장 문제 상황이라고 여긴 측면은 '양의 측정'이었다. 유아는 친구와 서로 다른 의견에 대해 양보하고 타협함으로써 문제 상황을 스스로 또는 친구와 협력하여 해결하였다. 3. 유아는 물질의 변화를 즉각적으로 관찰할 수 있는 요리활동을 선호하였다. 특히 유아가 직접 요리를 했던 활동이나 적극적으로 참여하여 역할을 담당했던 요리활동을 선호하였다.;The purpose of this study was to constitute a cooking recipe for children on the basis of Bank Street Program, Constructivism Program and Korean teacher's guidebook for kindergarten, to search a method of relating cooking activity and reading, and to watch what problems happen and how the children solve them. The specific questions for this study are as follows : 1. What are the kindergarten children's chance, interest, capacity for reading cooking recipe? 2. What are the kindergarten children's problems and solutions in cooking activity? 3. What sort is their favorite cooking activity ? The subjects were 6 kindergarten children, five years of age who wanted to do cooking, from a kindergarten of Seoul. For research question I and 2, the processes of cooking were recorded by a trained observer, and analyzed by the method of B. S. Engel. For research question 3, every child was interviewed with a question paper after that 10 cooking had been finished. The results of the study are as follows : 1. Children had chances to read through the cooking recipe. Literate children had chances to learn new vocabulary in reading the cooking recipe. Illiterate Children could know that letters go from left to right, from a high to a low, and they read it with their image relating pictures and letters. Children shouted more interest in reading when they were chefs. Children read easily the cooking recipe which was composed of picture, or one word, or picture and letter. 2. In the process of deciding the chef, planning, operating and estimating, many problems were occurred. The most serious problem for children was of 'measuring the quantity'. They solved the problems by making compromise and concession by himself or with friends. 3. Children preferred the cooking in which they could see material change at once, and especially in which they cooked themselves or played some roles participating positively.
