유치원의 간식운영에 관한 현황연구

Abstract

본 연구는 유치원 간식운영의 실제적인 현황을 서울시내 유치원 반일제학급을 중심으로 조사 분석하여 그 실태를 파악하려는데 목적이 있다. 본 연구의 구체적 연구문제는 다음과 같다. 1. 유치원의 간식내용은 어떠한가? 2. 유치원의 간식 실시방법은 어떠한가? 3. 유치원의 간식시간을 통한 활동은 어떠한가? 4. 간식에 대한 교사의 이해는 학력에 따라 차이가 있는가? 위의 연구문제를 알기 위해 서울시내 유치원중 반일제 학급을 대상으로 264곳의 간식담당자 각 1명씩 에게 38문항의 질문지를 배부하였으며 이중 회수된 141부를 분석하여 다음과 같은 결과를 얻었다. 1. 유치원 간식내용에 있어서 간식비용으로는 대부분(63.9%), 200원~300원미만이 사용되고 있었으며, 간식식품으로 가장 널리 사용되고 있는 것은 우유로 나타났다. 영양섭취면에서 볼 때, 열량식품이 과다하게 공급되는 경향을 보였으며 칼슘식품, 비타민식품, 단백질식품은 부족한 경향을 보였다. 간식분량은 제한하고 있어서 (77.3%), 적절하였으나 무제한 공급하는 경우 (22.7%)도 있어서 문제점으로 인식되었다. 2. 유치원 간식 실시방법으로는 점심을 먹는 날과 간식을 먹는 날을 구별하여 실시하는 경우(42.5%)가 가장 많았으며 매일 간식만 실시하는 경우가 34.8%, 일주일에 수차례 간식만 실시하는 경우가 22.7%로 나타나, 간식이 매일 규칙적으로 실시되지 않는 유치원이 더 많았으며(67.2%) 이는 문제점으로 인식되었다. 간식내용은 원장(39.0%) 또는 교사(31.9%)가 결정하고 있었으며, 간식식단은 식품의 영양가(51.8%), 유아들의 기호(39.7%)를 고려하여 작성하였는데 특별히 참고하는 자료가 없이 작성하는 유치원이 더 많은 것으로 나타났다. (59.4%) 간식구입은 대부분 매일 하고 있었으나 간식상차림시 유아가 참여하지 않는 경우가 있어(18.4%) 유아의 참여를 높여야 할 것이다. 3. 간식시간을 통한 활동은 다음과 같이 이루어지고 있었다. 식사 지도는 거의 모든 유치원에서 이루어지고 있었으나(99.3%)「간식후 다함께 일어나기 」,「팔꿈치 올려놓지 않기」등의 식사예절은 잘 지도되지 않고 있었다. 영양교육은 대부분 하고 있었으며(67.3%), 편식하는 유아가 있을 때 그 지도방법은 적절한 것으로 나타났다. 유치원 간식시간을 통해 관련되는 교육활동을 병행하고 있었으며(73.0%), 맛, 냄새, 색, 수세기등에 관한 활동이 잘 이루어지고 있었다. 4. 간식에 대한 교사의 이해는 전반적으로 부족하였다. 간식의 필요성과 필요이유, 간식시간의 규칙성과 그 이유에 대한교사의 이해는 학력에 따라 유의한 차이를 보이지 않았다.;Preschool snacks not only provides children more nutrition but also has a great effect on the food habit of children. This study aims for researching actual condition by investigating and analyzing current situation of preschool snacks through scattered kindergartens in Seoul. The chief problems of this study are as follows. 1. What are the contents of snacks? 2. how do they give children snacks? 3. What do children do during eating snacks? 4. Has the comprehension about snacks a difference according to the academic background of teachers? In order to see the answers of above problems, I made enque＾tes consisted of 38 items and distributed them to the 264 kindergartens in Seoul, 141 enque＾tes of distributed ones were collected, the results of collected ones show as follows. 1. Contents of snacks Most snacks expenses ranged 200 won-250 won and 250 won-300 won. Milk was the best drink for the children's snacks, child-ren ate cookies, breads and fruits, too. They gave children each kind of snacks once a week, they limited the amount of snacks in 77.3% of preschools. Considering nutrition intake, foods which mostly provides calories were used in the most of preschools. 2. How to give snacks Preschools which didn't give snacks everyday : 67.2% The president or a teacher decided the contents of snacks in most preschools : 69.5% When they made menu, they laid stress on the nutritional qualities of food and children's preference. Many preschools(59.4%) decided the menu without referring to special reference. Most of preschools bought materials of snacks everyday regardless of kinds of snacks. A child set the table with the help of a teacher, or she or he set it alone(81.6%) Table napkins were not used in 63.8% of investigated preschools. 3. Children's activity during eating snack Table manners were guided well (99.1%) but "standing up together after eating" and "not to raise elbows on the table", etc, were not well guided. Nutrition education was well done, but it was not done in 22.7% of preschools. the number of children who had an unbalanced diet was one or two at each snack time, main reason of unbalanced diet was that they didn't like it. The food which children did not eat well was fruit and milk. Teachers taught the children how to smell, taste, know the colours and count numbers through the snacks time. 4. Teachers were almost short of the comprehension on the snacks. The teachers' academic backgrounds had nothing to do with their comprehensions of the necessity of snacks.
