젖산균과 효모를 이용한 기능성 소재 함유 맥아 발효음료 개발

Abstract

Wort preparation and fermentation was investigated with a ultimate goal to develop a fermented beverage rich in prebiotics and functional ingredients as well as desirable in flavors. Wort, prepared with various malts, was fermented with Leuconostoc citreum HJ-P4 originated from kimchi and then Saccharomyces cerevisiae 89-5-2 isolated from Nuruk. L. citreum HJ-P4 produced various organic acids (e.g., lactic acid, acetic acid) as well as functional sugars (e.g., mannitol, panose) during wort fermentation. The concentration and ratio of lactic acid and acetic acid were significantly influenced by roasting conditions of malts used for wort preparation and aeration conditions during fermentation. The concentration of mannitol and panose was varied depending on sucrose content of wort and aeration conditions. S. cerevisiae 89-5-2 produced ethanol ranging from 10 to 25 g/L depending on fermentation conditions. These results indicate that metabolite concentration of fermented wort can be manipulated with roasting conditions of malts and fermentation conditions.;세계적으로 식품의 건강 기능성이 중요해짐에 따라 발요음료나 기능성 소재를 강화한 식품 시장이 널리 등장하고 있다. 발효는 식품의 영양적 가치와 저장성을 향상시키고, 식품의 맛, 향미 및 조직감을 증진시키는 효율적인 방법으로 과거에는 우유를 발효시킨 요구르트와 같은 유산균 음료들이 발효음료의 대부분이었으나 최근에는 채소, 과일 등 다양한 소재를 이용한 발효음료들이 제조되고 있다. 젖산균으로 발효시에는 유기산, 당알코올, 덱스트란 등 대사산물이 생성되며, 효모 발효시에는 에탄올, 탄산가스, 유기산 및 여러 가지 방향성 물길이 생성된다. 따라서, 젖산균과 효모를 모두 이용하여 발효할 경우 단독적으로 발효하는 경우에 비해 다양한 대사산물들이 생성될 것이라 예상되며, 이에 따라 관능적인 특성도 더욱 다양하게 변화할 것으로 생각된다. 따라서, 본 연구는 건강 기능성 소재를 함유하고 관능적 특성이 우수한 맥아 발효음료를 개발하기 위해 맥아즙 제조 조건과 맥아즙 발효 조건을 연구한다.
