Abstract
일반적인 녹차와 카페인이 제거된 녹차의 휘발성 향기성분을 비교하기 위해 동시증류추출법 (simultaneous steam distillation and solvent extraction, SDE)을 사용하여 추출한 후 gas chromatography/mass spectrometry (GC/MS)에 의해 분석하였다. 일반적인 녹차와 카페인이 제거된 녹차의 휘발성 향기성분으로 총 41개의 성분들이 동정 되었으며, 이는 8개의 alcohols, 15개의 terpene계 성분, 10개의 carbonyls, 4개의 질소 함유 성분, 4개의 기타 성분으로 분류되었다. 일반적인 녹차의 휘발성 향기 성분에 비해 초임계 이산화탄소를 사용하여 카페인을 제거한 녹차의 휘발성 향기성분은 대부분 감소하였으며, 카페인을 제거하면 할수록 보다 많은 휘발성 향기 성분이 손실 되거나 감소하는 경향을 보였다. 특히. 비극성 성분인 terpene계 성분의 경우 카페인을 제거하는 과정이 진행 될수록 휘발성 향기 성분은 점차적으로 감소하였다. 일반적인 녹차와 카페인이 제거된 녹차의 휘발성 향기활성성분은 1:3의 비율로 단계별 희석한 향추출법 (aroma extract dilution analysis, AEDA)에 의해 GC-O로 분석되었다. 대부분의 greenish 향을 나타내는 hexanal, (E)-2-hexenal, 일부 미동정된 향기성분들은 카페인을 제거한 녹차에서 손실 되거나 감소하였고, 꽃 향기를 나타내는 linalool, 2-ethyl-1-hexnol과 같은 성분들도 카페인을 제거하는 과정에서 감소하였다. 반면에 구운향과 고소한 향을 나타내는 2,6-dimethyl-3-ethylpyrazine과 2,3-diethyl-5-methylpyrazine은 일반적인 녹차에서만 인지되었다.;Volatile compounds in regular and decaffeinated green teas were isolated by simultaneous steam distillation and solvent extraction (SDE), and then analyzed by GC/MS. A total of 41 compounds, including 8 alcohols, 15 terpene-type compounds, 10 carbonyls, 4 N-containing compounds and 4 miscellaneous compounds, were found in regular and decaffeinated green teas. Among them, linalool and phenylacetaldehyde were quantitatively dominant in regular and decaffeinated green teas. Most volatile compounds decreased by decaffeination process using supercritical carbon dioxide. The more caffeine was removed, the more volatile compounds were reduced in the decaffeinated green teas. In particular, non-polar compounds such as terpene-type compounds were gradually reduced as the decaffeination process proceeded. Aroma-active compounds in regular and decaffeinated green teas were also evaluated by aroma extract dilution analysis (AEDA). Most greenish flavor compounds such as hexanal, (E)-2-hexenal and some unknown compounds disappeared or decreased in decaffeinated green teas. Aroma-active compounds, such as linalool and 2-ethyl-1-hexanol related to floral odors, also reduced during the decaffeination process. On the other hand, 2,6-dimethy-3-ethylpyrazine and 2,3-diethyl-5-methylpyrazine with roasted and nutty odor notes were perceived only in regular green tea.
